Sunrise Sourdough Bread

Vibrant, naturally-colored sourdough bread.







Make the three dough balls.














Shape the dough into a loaf and let it rise.


















Bake and serve the bread.












Ingredients

Yellow

  • 76g (1/3 cup) sourdough starter

  • 113g (1/2 cup) water

  • 190g all-purpose flour

  • 1 tsp salt

  • 1/2 tsp turmeric

Orange

  • 76g (1/3 cup) sourdough starter

  • 113g (1/2 cup) water

  • 190g all-purpose flour

  • 1 tsp salt

  • 1/2 tsp sweet paprika

Red

  • 76g (1/3 cup) sourdough starter

  • 90g (1/3 cup) water

  • 190g all-purpose flour

  • 1 tsp salt

  • 1 tbsp tomato paste


Instructions

  1. Make the three doughs by separately combining all the ingredients under each color. Knead until a smooth dough forms.

  2. Place each ball in a covered bin for an hour.

  3. Once the dough has relaxed enough, flatten each dough ball and stack them.

  4. For three hours, perform one coil fold of the dough each hour. This process will help mix the colors.

  5. Once the dough is puffy, shape it into a loaf and place it in a proofing basket. Let it rest, covered until it is puffy.

  6. Preheat the oven to 425 F. Place the loaf on a baking tray, score it, and bake it for 25-30 minutes.

  7. Let cool before slicing and serving.
