Soft flatbread with a garlic finish.

Serve warm with curry or soup.

Ingredients

Dough Ingredients

  • 227g (1 cup) sourdough starter

  • 120g (1/2 cup) coconut milk

  • 240g (2 cups)all-purpose flour

  • 1 tsp salt

  • 1 tsp baking powder

  • 1tbsp olive oil

Garlic Butter Ingredients

  • 57g (1/4 cup) butter, olive oil, or margarine, melted

  • 2 cloves of garlic

  • 1 tsp salt

Instructions

  1. Start the flatbread dough. Mix all flatbread ingredients together in a large bowl.

  2. Knead until a cohesive dough forms. Place the dough in a well-oiled bowl. Let the dough rise for 4 hours.

  3. Form the flatbreads. Split the dough into 8 pieces. Roll each piece into a ball and leave them to rest for 10 minutes.

  4. Working one at a time, flatten each dough ball into a large oval, about 1/4 inch thick. Let these rise for 30 minutes.

  5. Make the garlic butter. Combine the butter, garlic, and salt in a small bowl.

  6. Heat up a nonstick skillet over high heat. Brush one side of the flatbread with the garlic butter and place that side down in the pan.

  7. Fry the flatbread for about 90 seconds, brush the other side, then flip. Cook for another minute then repeat with the remaining dough.
