Kolaches Three Ways

A light, sweet yeasted bun with a sweet filling of sesame, apple, or strawberry crisp.






Roll the dough into balls and make deep indents for the filling.













Stuff the kolaches with filling.













Bake and serve hot.






Ingredients

Makes approximately 20 kolaches

Dough

  • 2 1/4 tsp instant yeast

  • 120g (1/2 cup) sourdough starter

  • 120g (1/2 cup) unsweetened applesauce

  • 1 tsp baking powder

  • 57g (1/4 cup) vegan cream cheese or sour cream

  • 180ml (3/4 cup) soy milk

  • 100g (1/2 cup) granulated sugar

  • 1 tsp salt

  • 57g (1/4 cup) melted coconut oil

  • 480g (4 cups) all-purpose flour

Apple Filling

  • 28g (2 tbsp) olive oil

  • 80g (1/3 cup) light brown sugar

  • 1 tsp cinnamon

  • 1/4 tsp salt

  • 4 large apples, peeled, cored, and finely diced

  • 50g (1/4 cup) lemon juice

  • 227g (1 cup) applesauce, unsweetened

Black Sesame Filling

  • 150g black sesame powder

  • 70g honey

  • 2 tbsp oil

  • 4 tbsp tahini

  • 1 tsp salt

Strawberry Jam Filling

  • 120g (1 cup) all-purpose flour

  • 100g oats

  • 50g (1/4 cup) sugar

  • 70g (1/3 cup) brown sugar

  • 2tsp cinnamon

  • 1/2 tsp salt

  • 50g (1/4 cup) olive oil

  • 85g (1/4 cup) strawberry jam

Instructions

Dough

  1. Mix all of the ingredients together. Using a stand mixer or by hand, knead until a smooth dough forms.

  2. Let the dough rest for an hour. Split the dough into 20 equal-sized balls, approximately 50g each. Let the dough rest for an hour while you make one of the filling options.

Filling

Apple Filling

  1. Heat the oil, brown sugar, cinnamon, and salt in a medium saucepan until bubbling. Add in the apples and cook until soft.

  2. Strain and reserve the liquid from the apple mixture. Set the apples aside.

  3. Return the liquid to the saucepan and add the applesauce and lemon juice. Cook until it thickens.

  4. Combine the apples with the thickened sauce and place in the fridge to chill.

Black Sesame Filling

  1. Combine all of the ingredients in a food processor and process until a smooth paste forms.

Strawberry Jam Filling

  1. Whisk together the flour, oats, sugar, brown sugar, cinnamon, and salt in a small bowl. Add the olive oil and mix until the crisp mixture comes together.

  2. To assemble, spread a thin layer of strawberry jam in each indentation then top with a generous heap of crisp.

Assembly

  1. Preheat the oven to 350. Grease or line a baking dish.

  2. Make a deep indent in each dough ball. Ensure it's deep enough so the filling stays inside during baking.

  3. Place a tablespoon of the filling inside each dough ball.

  4. Bake the kolaches for 30-35 minutes or until golden brown. Serve warm or at room temperature.
