Hot Thai Basil Stir Fry

This spicy, flavorful stir fry comes together quickly for an easy weeknight meal.







Sadly, the cat wouldn't even approach this food due to the spice.







Ingredients

  • 2 tbsp sesame oil

  • 1 onion, diced

  • 2 longhorn peppers, or other hot green chilis, cut into thin strips

  • 2 red bell peppers, cut into thin strips

  • 3 tbsp Sichuan peppercorns, freshly ground

  • 1 tbsp crushed red pepper

  • 1 tbsp ginger paste

  • 3 cloves garlic, minced

  • 1 package Impossible beef or other ground beef substitute

  • 4 tbsp soy sauce

  • 1 tbsp rice vinegar

  • 2 cups fresh Thai basil

  • Rice, for serving

Instructions

  1. Heat the sesame oil in a large pan. Cook the onion and hot peppers until translucent.

  2. Add the bell peppers and cook until tender. Add the ground peppercorns and crushed red pepper, and toss to coat the veggies.

  3. Add the ginger paste and garlic. Cook for a minute until fragrant, then add the beef.

  4. Pour the soy sauce and vinegar in and cook for a few minutes. Fold in the fresh basil, and cook until just wilted.

  5. Serve alongside rice.
