Decadent dark chocolate brownies with a coffee flavor.
Brownies are best enjoyed being frozen.
Ingredients
225g (2 sticks) butter
225g 70% dark chocolate, chopped
1 tbsp instant espresso powder
30g (1/8 cup) water
45g (1/2 cup) cocoa powder
4 eggs
200g (2 cups) sugar
215 all-purpose flour
1 tsp salt
Instructions
Preheat the oven to 350 F. Grease a 9x13-inch pan.
In a microwave-safe bowl, melt the butter and chocolate in the microwave in 30-second intervals. Dissolve the espresso powder in the water.
Add the dissolved espresso powder and cocoa powder to the melted butter and chocolate. Whisk until a smooth mixture forms. Set aside to cool slightly.
Beat the eggs and sugar together until creamy. Once the chocolate mixture is cool enough to avoid scrambling the eggs, beat in the chocolate mixture.
Combine the flour and salt then add to the rest of the batter. Gently stir until just combined.
Pour the batter into the pan. Bake for 25 minutes. Let the brownies cool before cutting. These brownies are fudgiest when eaten directly from the freezer.
