Got leftover apple peels from making a pie or applesauce? Throw them in some pancakes!
Fluffy pancakes with apple spice.
If you have extra apple peels, fry them with cinnamon and use them to top the pancakes.
Ingredients
Apple peels from 4-6 apples
240ml (1 cup) soy milk
1 tbsp lemon juice
2 tbsp sugar
1/4 tsp allspice
1/4 tsp cardamom
1 tsp cinnamon
1/4 tsp cloves
1/4 tsp ginger
1/4 tsp nutmeg
1/2 tsp salt
2 eggs, whites and yolks separated
160g (1 1/4 cups) all-purpose flour
1 tsp baking soda
1 tsp baking powder
Oil, for greasing
Instructions
In a blender, combine the apple peels, soy milk, lemon juice, sugar, allspice, cinnamon, cloves, ginger, nutmeg, salt, and egg yolks. Blend until smooth.
In a separate bowl or stand mixer, beat the egg whites until stiff peaks form.
Mix the flour, baking soda, and baking powder into the apple mixture until thoroughly combined.
Gently fold in the egg whites.
Heat up and grease a nonstick skillet.
Pour small ladles of pancake batter onto the skillet. Flip when bubbles appear, then cook for another minute or two.
Serve warm with butter or syrup. Alternatively, if you have extra apple peels, fry them with some cinnamon and use them to top the pancakes.
