A spicy chili oil to be used in stir-fries or as a condiment
Ingredients
30g dried chiles de Arbol, deseeded
30g dried ancho chiles, deseeded
30g Szechuan peppercorns
250g oil
20g sugar
10g dried mushroom powder
30g fresh ginger, sliced
50g roasted peanuts
3 cloves of garlic, minced
30g sesame seeds
Instructions
Grind the dried chiles and Szechuan peppercorns in a spice grinder or mortar and pestle.
Heat up the oil in a saucepan.
Add in the ground spices, sugar, and mushroom powder.
Cook for a few minutes, turn off the heat, then add ginger, peanuts, garlic, and sesame seeds.
Allow the oil to cool, then transfer to a jar for storage.
Store the chile oil in the fridge. Use it as a condiment or as a base for a delicious stir-fry.
