Chile Oil

A spicy chili oil to be used in stir-fries or as a condiment


Ingredients

  • 30g dried chiles de Arbol, deseeded

  • 30g dried ancho chiles, deseeded

  • 30g Szechuan peppercorns

  • 250g oil

  • 20g sugar

  • 10g dried mushroom powder

  • 30g fresh ginger, sliced

  • 50g roasted peanuts

  • 3 cloves of garlic, minced

  • 30g sesame seeds

Instructions

  1. Grind the dried chiles and Szechuan peppercorns in a spice grinder or mortar and pestle.

  2. Heat up the oil in a saucepan.

  3. Add in the ground spices, sugar, and mushroom powder.

  4. Cook for a few minutes, turn off the heat, then add ginger, peanuts, garlic, and sesame seeds.

  5. Allow the oil to cool, then transfer to a jar for storage.

  6. Store the chile oil in the fridge. Use it as a condiment or as a base for a delicious stir-fry.
