Baked Jalapeño and Black Bean Rice

Roast the jalapeños.













Mix all of the ingredients together in a dish.










Fluff the rice after baking.






Ingredients

  • 6 large or 10 medium jalapeños, diced

  • Salt and pepper

  • 5 tbsp olive oil

  • 1 cup jasmine rice

  • 1 tsp chile powder

  • 1 tsp oregano

  • 1/2 tsp cayenne

  • 1/2 tsp cumin

  • 3 oz pepper jack cheese, shredded (optional)

  • 1 14oz can of black beans

  • 1 cup vegetable broth or water

Instructions

  1. Preheat the oven to 425 F. In a 9x13 inch baking dish, toss the jalapeños with 2 tbsp of olive oil and season with salt and pepper. Bake for 15 minutes.

  2. Lower the oven temperature to 350 F. Add the rest of the olive oil, the rice, and the spices to the baking dish. Toss to coat the rice.

  3. Mix in the cheese (optional) and black beans. Gently stir in the vegetable broth. Cover the pan tightly.

  4. Bake for 1 hour 10 minutes. Uncover and gently fluff the rice before serving.
