Apple Butter Mochi

Chewy mochi with a cinnamon apple butter filling.

Generously spread cornstarch and roll out the mochi dough.

Cut out dough circles and place a dollop of apple butter on each one.

Roll the mochi into a ball.
Ingredients
Apple Butter
5 apples, peeled and diced
100g water
50g sugar
2 tbsp lemon juice
50g brown sugar, to taste
1 tsp cinnamon
Mochi
120g glutinous rice flour
50g sugar
200g water
Cornstarch, for dusting
Instructions
Apple Butter
Combine the apples, water, and sugar in a large saucepan over medium-high heat. Bring to a boil, reduce the heat, and simmer for 20 minutes.
Transfer the mixture to a blender or food processor and process until smooth.
Return the blended mixture to the saucepan. Add in the lemon juice, brown sugar, and cinnamon.
Simmer over low heat until the apple butter thickens to a spreadable consistency, about 1.5-2 hours.
Mochi
Combine all of the ingredients in a microwave-safe bowl. Microwave on high in 30 seconds increments, mixing in-between, until the dough turns shiny. This should take about 2-3 minutes.
Generously dust a surface with cornstarch. Roll the dough into a flat rectangle. The dough will be extremely sticky but continue to dust generously with cornstarch.
Cut out circles of dough. On each circle, place a dollop of apple butter. Using cornstarch-dusted hands, pinch up the sides to seal the mochi.
Gently reshape the mochi into circular shapes and serve.
